  Sandwiches are always good, but sandwiches made on fresh-baked bread are next level. A few inexpensive ingredients can turn into a delicious loaf with just a little bit of work. What is it about fresh-baked bread that makes it so amazing? Bread in general is delicious, and I could never understand how someone would willingly give it up. I’ve really become partial to recipes that use instant yeast. Rapid rise yeast seems to work perfectly every time, so there’s no wondering if I made the water too hot or too cold for the yeast to activate. The dough seems to proof quicker with instant yeast. That said, this could just be the nature of the recipes using rapid rise yeast versus those that use traditional yeast. As parents are sending their children off to school once again, how much fun is it to send them back with a sandwich made from homemade bread, or to have a loaf at home waiting for an after-school snack. Of course store-bought bread is absolutely wonderful, but there’s something a little fancy about having fresh-made bread. It’s even better when that bread was fairly easy to make. This recipe makes two loaves, but I opted to make one loaf and one small batch of cinnamon rolls for a Sunday morning brunch. The more and more I make different yeasted doughs, the less and less afraid I am of trying new and more complex recipes. If something goes a little wrong, it still usually tastes pretty good. If it does go horribly wrong, the financial consequences generally aren’t that bad. Even with inflation, a few cups of flour, a little bit of yeast and some tap water are still fairly affordable. Ingredients 1 2/3 cups lukewarm water. 2 1/4 teaspoons instant yeast. 1 teaspoon sugar. 1 tablespoon honey. 1 teaspoon salt. 1 1/2 tablespoon unsalted butter, cubed at room temperature. 4 1/2 cups all-purpose flour. 1 1/2 tablespoon butter, melted for brushing. Let sit for five to 10 minutes, until foamy. Add remaining water, honey, salt, cubed butter and four cups of flour to the bowl. Knead at low speed until the dough comes together and is soft but not sticky. Add a few more tablespoons of flour if necessary. Continue to knead for six to nine minutes until the dough pulls away from the sides of the bowl and is soft and smooth. Transfer the dough to a lightly greased bowl and make sure that it is completely coated. Cover with plastic wrap and let rise in a warm and draft-free place for about 45 minutes or until doubled in size. Lightly flour your work surface and turn out the dough onto it. Divide it into two equally sized portions. Use your fingers to gently pat each half into an 8-by-12-inch rectangle while pressing it all over to remove any air pockets. Starting at the short end, roll up the rectangle into a tight roll and pinch the seams to seal. Tuck the ends of the roll slightly under the roll to create some tension on the surface and place each loaf into a greased 8-by-4 inch loaf pan tucked ends and seam side down. Cover with a greased piece of plastic wrap and let rise for about 45 minutes in a warm and draft-free place until doubled in size. Preheat the oven to 390 degrees, and adjust the oven rack to lower-middle position. Bake loaves for 25 to 30 minutes until golden brown and the loaf registers 208 to 210 degrees internally. Invert bread onto a cooling rack. Reinvert loaves and brush tops and sides with melted butter. Let cool completely before slicing.
